This is an excellent soup to serve on Thanksgiving day. It is simple and can be prepared ahead of time. My kids love it on Thanksviging but also all year round.
For 4 people:
- 3 zucchinis, sliced (skin on)
- 2 large onions, diced
- 2 cups of chicken stock
- Some fresh sage or a pinch of dried sage
- 1 stick of butter
- Salt, pepper to taste
- Optional : 1 tbsp of sour cream
In a large pan, melt the butter. Add the onions and cook on low/medium heat until transparent and tender (about 20 minutes). Add the sliced zucchinis and cover with chicken stock. Add the sage & pepper. Cook until tender (about 30 minutes) on low/medium heat. When done, puree the soup, add salt to taste. Optional: add a tbsp of sour cream.
